コロナ禍も好調の路面洋菓子店、「スイーツ戦争」どう変わる？
緊急事態宣言中にテレワークが普及し、都市部を中心にビジネスシーンでの贈り物の需要が減少。百貨店では入店客数も昨年から大きく減少している。一方、これをきっかけに、郊外のロードサイドの菓子店には売り上げを伸ばすなど、「勝ち抜け」に成功している店もある。「スイーツビジネス」に起こった変化とは？（ダイヤモンド編集部 笠原里穂）
● コロナ禍3～5月も売り上げ増！ 「ロードサイド洋菓子店」人気のワケ 山梨県甲府市に本社を構え、洋菓子の製造・販売を行うシャトレーゼ。1975（昭和50）年から洋菓子店のフランチャイズ展開を始め、今は全国に500店以上の店舗を構える。そんなシャトレーゼでは、外出自粛で小売り・外食業界が大きな打撃を受けていたコロナ禍の3～5月において、売り上げを昨年対比で2～3割以上伸ばしていた店舗もあったという。 「学校が休校になっていた3～5月は、夏休みと同じように日々のご家庭でのおやつ需要が高まっていたと思います」 シャトレーゼ広報室室長の中島史郎氏は、そう振り返る。シャトレーゼの“ウリ”は、地元の契約農家や農場から直接仕入れた原材料を使って自社工場で作ることで、安心・安全な菓子を手頃な価格で提供できることだ。こうした同社の特性が、「日々のことだからリーズナブルなもの、かつ家族の健康のことを考え、『添加物をなるべく使わない』といった原材料にこだわった商品を選びたい」というコロナ禍の中における消費者のニーズにも合致したのではないかと、中島氏はみている。 加えて、売り上げ好調の大きな要因といえるのが、「立地」の優位性だ。3～5月、ショッピングモールに含まれる店舗はモールの営業事情に合わせて休業せざるを得なかったが、シャトレーゼ店舗の大半を占める郊外のロードサイド型の店舗は営業を続けることができた。そうした店舗には駐車場が併設されているため、顧客は自家用車で店を訪れ、わずかな滞在時間で商品を買うことができる。遠出をするのがはばかられる時期にも、自宅近くの店舗であれば来店のハードルが下がる。こうした買い物をする上での安心感も、来店を促進する要因になったといえる。
